It's funny. When Ray Grim and I played that Entertainer arrangement at my wedding reception, I wasn't even slightly nervous. And I missed a bucket of notes. There was too much good will in that room to be worried about much of anything--that and my store of adrenalin had probably already been used up.

And I understand sugar crashes. As an endurance athlete, managing blood sugar is a prime imperative, with the dreaded bonk the reward for not doing so. I was indeed empty of stomach during that rehearsal, and generally at a low energy state. You are right that the body sees a greater need for adrenalin in those circumstances. And, yes, the shakes seem more likely then as well. But too full a stomach causes another physiological problem that interrupts playing profoundly.
