Matt, I'm interested in why you think that the original York valves are superior? Most of the York valvesets that I've seen weren't all that great and had a big problem with corrosion in the ports. Your basic nickel-plated brass jobs.
It's much cheaper to rehabilitate an exisiting valveset than to go out and buy a new one, so if York valvesets were all that great, you'd see them being kept.
Successful valve building is primarily a matter of materials and precision machining, both of which modern technology has improved dramatically. Walter Nirschl arguably makes some of the best piston valvesets the world has ever seen.
