WORD MUSIC has "The Hymnal for Worship & Celebration". It is available with easy tuba solo parts and full piano scores.....you can basically sight read this stuff and guide even the most conservative chuch goer in a nice worship.

I've not done much solo work (AT) church, but I play fairly often w/ T-bone & Euphonium.
Douglas Smith - Trombone Hymns & Fanfares (straight forward trio arrangements)
John Marcellus - Trios and Quartets for Brass (nice!)

Marty Neilan mentions Handel's The Trunpet Shall Sound.......T.W.Sayzee has a fun duo arrangement for two tubas(or T-bone) w/ piano acc.
