As far as playing characteristics, you'll be the best judge of that. It would be helpful if you bring someone that is familiar with your sound playing style to help you out -- depending on what size room you're in, a horn can sound a lot different from across the room than in your lap. Personally, as all three horns you mention have the same size shank, I'd use the same mouthpiece on all three different horns. If you already play a large shank, then by all means use your own. If not, maybe the dealer with your size mouthpiece in a large shank for you to use. (This is of course assuming you've already settled on the right mouthpiece for yourself).
As far as the three horns go:
The Yamaha 641 is the old style, still preferred by some.
The 642 is the new style
The Besson 968 is the smaller (bell and leadpipe) version of the 967.
If possible, I'd most defiately try a 967 also.
