You might give a look at Frank Siekmann's "Rhapsody on Norwegian Christmas Carols". I'm not sure about the exact title, so it might be slightly different. It's easily playable and has some beautiful carols that most of us haven't heard. Some ta-ka-ta parts, but also lots of melody.
