When restoring a mouthpiece, I take special precautions to not alter the shape of the rim, unless the customer wants it altered. When there are rough edges to the dings, I attempt to burnish that out as much as possible, in an attempt to get some of the metal back into place. For really bad dings in the rim, there are (time-consuming) methods of filling them. As Rick said, a properly-plated mouthpiece will have a copper flashing, silver plate, and then a good, substantial gold-plating. If you have a mouthpiece you really like, restoring is almost always recommended, for I restore them for about half the price of a new one.
