I like to take a different tack. I've used an unaccompanied song such as "The last rose of summer" or "Irish tune" (aka Danny Boy). When the intermission is over, but the audience is still milling about and talking, but mostly seated, I just start playing. This seems to "ease" them back into focus and it's relaxing to me as well. Most times this piece isn't on the printed program. I've received very good feed back doing this.
