A student once asked the great British horn player Alan Civil, what he should look for in a mouthpiece. Mr. Civil seriously told the student that it should have a hole at both ends. Myself, I'd say it's a combination of the two things you mentioned: you want a m.p. that works well with your horn, but also feels at least somewhat comfortable on your face.
