The primary difference is in the taper of the instrument. The saxhorn has a more cylindrical (i.e. slower) taper than does the conical euphonium. Think of it as a cornet-style horn to the euphonium's flugel-hornedness.

FWIW, the saxhorn is the predominant brass instrument in Civil War era brass bands.

Courtois seems to also draw a distinction between baritone horns and saxhorns, which isn't at all obvious to my eyes. Perhaps a baritone is even more cylindrical than the saxhorn?
