Suppose your part is written in C major; you'd read it as if it were in Eb.  Now, suppose you see a written Gb.  You're already playing G natural as Bb, so you'd play the flat as A natural.  Similarly, suppose you're playing a piece written in G (one sharp).  You see an F natural notation--that means you play Ab.   It can be confusing, particularly when the accidentals are cautionary.
