We generally record whole movements and very few cuts. I'm sure the reason we record that way is by demand of the recording company (they are paying for the session, the hall and other expenses).

I'd always heard that orchestral recordings were full of places the musicians were unhappy with, now I've experienced it. Blame it on the budget. The performers are almost helpless to do anything about it, except play mistake free every time. There are a couple of pieces that I want "do-overs" for, myself.

Recording sessions are brutal, typically 3 days, 2-3 sessions a day, 3 hours a session. It's very intense mentally and physically.
