A recital is like a meal eaten in courses. When choosing how to program your music keep this in mind. What is your dessert piece, your main course piece, your appetizers, etc...

As to what to choose pick things that will challenge you, but at the same time show how well you can perform as a musician on your instrument.

As to length I think an hours worth of music is about right. Play for 40 minutes, take an intermission, play another 20. Of course this is depends on what is expected of a recital in your area.
