If you want to stay in Minnesota, Red Wing is about 50 miles from Minneapolis. I don't think that they are cheap, but they are certainly one of the better known repair schools. The program runs two semesters.

I know of shops that have taken on apprentices, but I don't know of any in your area.

In my opinion it's always a good idea to pursue that which you believe will bring you fulfillment in life. If instrument repair is higher on that list than teaching or performing, then you should go for it. I don't think that a one year delay in grad school can hurt, especially if you are learning another skill. As long as you continue to practice, and preferably take private lessons, it sounds like a good idea to me.
