Those "copper" springs are, most likely, bronze, which is at least as expensive as stainless steel. Bronze springs are about half as stiff as stainless steel, however, for identical spring wire diameter, number of coils, coil diameter, and (free) coil height. It is very easy to compensate for differences in material stiffness by modifying other factors in the spring design.

Unless you are operating your valves in an enviroment that would etch your tuba or melt the solder joints (and do very bad things to you), a suitable bronze spring would serve as well as a stainless steel spring.
