I'm with James on this one. I wanted to also add slurring to the list of reasons you would not want a pure binary action. Controlling the movement of the valves as you slur can add a lot of musicality to the sound and even make a slur smoother.
Many years ago I had the opportunity to play Bach and Widor on a large old pipe organ that had the electromechanical action. It took a lot of getting used to, you felt VERY seperated from the instrument, and runs were impossible for me at first. There was even noticeable delay between pressing the key and sounding the note. The electronics were good for throwing a lot of stops fast, though. However, the Hammond B-3 series organs have a light touch but you still feel very much an intimate part of the musical experience.
