My undergrad teacher did his dissertation on Salvation Army solos for euph and brass band. This was published in the ITEA Journal last year sometime (I think Fall or winter, sorry I can't remember exactly, and my Journals aren't home at the moment (:.) I for one was shocked at how much literature there actually was there! I think this music can be purchased by anyone now, so you might find something that looks interesting. These solos incorporate a hymn tune of some sort, woven in with original music... usually very musical material. I played an SA tuba solo with my former band and really enjoyed the music. These pieces are usually great crowd pleasers it seems, and come in varying levels of difficulty.
