Not to state the obvious, but the E flat and F are are two different instruments, not just the same instrument pitched a full step apart. I've owned many of both over the years, and although I'm more proficient on the E-flat I find that the F works better for much of the contemporary literature such as quintets and solos. Two basic observations: The F is better suited to "orchestral" keys such as C, G, D, etc., but also works well in F (duh) and B-flat. Second, the E-flat is inherently superior for a better sound (read: not like a euphonium on steroids like most F's) and a heftier, more focused low end. Afterthought: The F [tpprobably works better as the high tuba alternative for the C player, while the Eb might work better for the BBb player. As Jay suggested, it's all based on what you're used to, and what works best for you.
