Welcome back to the tuba! In my opinion, the 321 is a good choice. All Yahama 321 tubas that I have tried were good solid tubas (a lot of the tuba players in Baltimore used to use these professionally). As for the E flat, you can have a long happy musical life with only an E flat. You may want to keep your eyes open for one of the old, big, four valve (or something that can have a fourth valve added) E flats that come up for sale on occasion for those rattle the walls with low notes moments (and keep the 321).
