Perhaps you could shop for Sax Quintet arrangements that feature the Baritone sax!! Then you'd have a feature piece ready-made... Eb Bari sax notation is easy to read no matter what tuba you play.
Then again... there may be no such thing as a sax quintet bari feature.
Alternatively, perhaps you could actually adapt a brass quintet arrangement that features the tuba --- transpose/adapt the 2 trumpet, horn and trombone parts for the saxes... it might require the odd octave change and/or re-voicing here and there to make it work.
