I may stand corrected (I'm sure if I'm wrong someone will surely point it out!) but... I have always been under the impression that the nickel plate is used to help eliminate some of the electrolytic problems of brass against copper or brass. Valves are more prone to corrosion if the materials are the same or similar. Most of the wear I have seen on nickel plated valves has happened on the pistons... not the casing.
