I think the key may be to do as Rick and others have suggested, and teach those who WANT to learn rather than all comers. I taught courses on radar threat classification to fighter pilots, and there was a remarkable difference between those who had just spent the last evening at the O club and those who would be depending on the information to save their lives the next week. When you are teaching a subject you know and love, when you want the student to have the skills, and the student can't wait to get it out of you, there's your satisfaction.
