I have a fostex V-08 that is a stereo recorder onto hard drive recording device. It has 2 xlr/1/4 inch imputs that can be trimmed, 1/4 inch stereo out, midi in/out, and 24 pin access. This allows me to record from and to most any device. The deck is very clean if you record flat. It has 32 internal effects that you can use without destroying the original recording, and will record 32 hours plus in stereo mode. I spent around $575 for it new.

Good microphones are a must, but also important is a good mixer or mike pre-amp. Many good recordings can be made off a middle of the road shure mike and a decent 4 channel mixer. The mixer acts as a pre-amp for the mike, and gives you some control over the mike's performance. These can be found below $500 new, and below $200 on ebay.
