My favorite music composing software is NoteWorthy Composer. You can order on-line from: http://NoteworthyComposer.com (I have no financial or other interest in this).
It costs $39 US and comes with a CD, free web-based upgrades and support. There is also a newsgroup and a listserve for interested people.
The software has the capability to get MIDI input (i.e., from a keyboard), save as MIDI files or their own internal format.
I have tried Cakewalk and Finale and find this to be the easiest to use and most useful for notation, playback and dealing with MIDI files.
