You are absolutely right. When you are tuning and the temperature and humidity are nowhere near the standards for A-440, A-440 becomes irrelevant. I believe that there are people with very good relative pitch, but I think "perfect pitch" is a myth.
I've played with groups that are spot-on, and I've played in Europe with some very high- pitch groups, but the actual pitch was secondary in importance to us all playing the given pitch level together.
All tuning is a compromise. I tried once to tune a piano, using an electronic tuner. When every pitch lined up with this electronic device, it sounded just horrible. I re-tuned it by ear, and it was fine again. Our ears hear in a non-linear fashion, and not going into the physics of it all, let's just say we should trust our ears more than the little black boxes.
